We are a newlywed couple without children, and would like to prevent pregnancy for a while without relying on pills and devices.
Is it possible to have intercourse (assuming it is physically possible) completely, without ejaculation during intercourse (it is indeed possible to ejaculate during rape(?) while sleeping), or is this also considered a sin?

I’m not sure I understand the question.
First, there is a mitzvah of Pur that requires good reasons to avoid it.
Secondly, I don’t see how one avoids ejaculation. It sounds unlikely to me.
Third, I don’t know what the causal relationship is between such an act and ejaculation during sleep. If it is a result of your actions, there is no rape here (it is more serious than allowing oneself to be raped).
In any case, it is possible to have sex during “safe” times. It is of course not hermetic, but at most there is a small chance that you will have children. There are bigger “disasters.”
