Where are they located?
Based on your perception that without a broad education it is difficult to be a serious scholar, and also based on your familiarity with the religious world in all its varieties, my question is where in your opinion are young people with high-level religious studies (apparently not in most of the national religious yeshivas and certainly not in the universities) and yet well-educated (apparently not in the Haredi yeshivas).
And if these are not available at all, what should I give up as a 21-year-old young woman who is interested in realizing the value of Torah study through marriage to a Talmid Torah (a Torah scholar, as you define it), and yet is not interested in having a good life with him?

There are young TAs of the type I spoke about in both Haredi and modern Zionist yeshivahs. If it's important to you, you can certainly find such a partner. Don't give up on anything. Of course, at your age, he won't be a full TA yet, but you'll be able to find potential and desire in him.
