Who decides if there is a plurality of opinions?
For example, Shulchan Aruch says this and Rambam says this?
There are no rules about this. The Shul is usually given greater status.
But is there any legality in this matter? For example, did a rabbi make you one? If I am attached to one rabbi, do I have to stick to him in every ruling or is there any possibility of also switching between rabbis if the logic changes from topic to topic?
In principle, if you choose a rabbi, it is recommended and customary to stick to the same one. Certainly not to choose rulings based on what is convenient. You asked about books, not rabbis, meaning you asked what a posak is supposed to do.
