Is it possible to say once in the mincha that I receive two days, for example, of fasting from dawn until the stars appear, or does one have to say it every day to receive for the next day?

It seems like there is simply no problem. The whole issue of receiving kabbalah in advance is mainly for those who have vowed to fast, as then receiving kabbalah in the offering defines the next day as a fast day that constitutes payment for the vow. But even if you don’t have a vow, you can fast without kabbalah.
