How can one know anything?

I’ve recently been learning a little about epistemology and skepticism, and I have to ask, is it possible to know anything at all?
If it really is impossible, how can we believe in Hashem at all? Maybe all our logical explanations are nothing more than an illusion of our minds?

If you do not identify knowledge or truth with certainty, no problem arises. I have dedicated two books to this: Two Carts and Truth and Unstable

But if there is no knowledge in the first place, how can there be certainty?

Nothing is certain. But knowledge doesn't have to be certain.
