A priest who marries a divorced woman, why don’t they say that the kiddushin doesn’t apply at all, since we sanctify \’according to the law of Moses and Israel\’
And such marriages are not according to the law of Moses and Israel, why do we even need a divorce?

These are marriages according to the Law of Moses and Israel because the Law of Moses and Israel determines that they are valid (retroactively). The question of why it determines that they are valid is a different question.
