I am looking for in-depth, yet layman-friendly, reading material on randomness and probability, and our basic assumptions as humans in this regard.

I don’t know. You can search online. There are books and articles by Daniel Kahneman about thinking errors.

I really recommend the books by “Eliezer Yudkovsky” , personally I read “Rationality: from AI to Zombies” and I really enjoyed it…. In general, all his stuff is about that
