If I get a ruling from the Gemara that is not the way the people used to do it

When the Gemara says, “May God have mercy on us! Did not Joshua ben Nun tell me from his name that we should not obey him!”
Does it mean that even if the Torah bearer (one does not dare to say Moses, so they say Joshua) were to say that this is the truth, *no* would I listen to him, meaning that there is no significance to true understanding, but only to what was decreed??
You see, there is no such thing as saying, “I know what the truth is,” but rather doing what is accepted.
Similarly, in the story of Achnai’s oven, it is not important what the “truth” of the Torah is, but what was accepted.
PS.
Of course, the halakha was created in their time, so it is a little different from ruling today according to them. But the principle is the same.
