Hello Rabbi, in light of the fact that dishes are not washable, is it possible to clean the pots thoroughly and forgo their use for Passover?

This depends on the different materials and each material must be tested individually.
Although during Passover they used to be stricter and not even use glass vessels for leaven, this is a custom and in times of need there is certainly room for leniency.

Hello, I am Spanish, so the custom is that glassware does not need to be cleaned at all, even for Passover.
And this is a completely normal stainless steel pot. Apparently, we can rely on this from the start?

If stainless steel does not absorb moisture (as I believe is true), then as stated in the law it is permissible, with the exception of custom.
