Why do we wait between meat and milk?

Nowadays, why do we wait between meat and milk? Apparently the flavors don't exist today. If meat remains between the teeth on the one hand, then you can brush and clean properly. And if flavor remains on the other hand, then you can transfer the flavor by cleaning it sufficiently or by using other foods and the like.
