How can I prove that there is only one God and not two or four, etc.?
Also, can God create another god like Himself? Because if not, then He is not omnipotent (not that this detracts from His being God, but omnipotent He is not). And if yes, then even now He is not omnipotent.

You can’t (or at least I can’t). But why assume there is more than one? That’s Ockham’s razor.
As for your second question, it is similar to the question of the stone He cannot lift. See column 302 and more there.
