Hello Rabbi,
I wanted to ask whether the Rabbi eats everywhere with standard Rabbinate kashrut certification, or is careful to eat only mehadrin or something else.
Is there any point to such stringencies?
If the Rabbi could address specifically the difference between levels of slaughterhouses, if such a difference exists.

In the past I was careful about this, and today less so. I don’t think it justifies restrictions against eating in various places. I’m not expert in what is actually going on in practice.
There is an excellent book called "Eat with Joy" by Rabbi Bigel that deals with the differences between levels of kashrut, and especially slaughterhouses; see there. Highly recommended.
