It is clear that the Sages knew only the science of their own time, and if there is a contradiction between their statements and modern science, I assume that our knowledge is more reliable. This applies both to rabbinic laws and to Torah-level laws that were generated through the interpretation/derivation of the Sages (such as worms that are generated from decay or inside the fruit, etc.).
