If I have nothing that if it happens I will stop believing in Judaism, does that actually mean that my faith is something that cannot be refuted and therefore is not real for me? Or is this inference from scientific theory to belief in religion incorrect and in faith it is possible to believe even though I will not stop believing no matter what happens?

First of all, who told you there is no such thing? Have you already encountered everything? Second, there is a difference between the claim that there is nothing that will make you abandon your faith and the claim that there is no fact that will refute the claim that there is a God. Third, scientificity is not synonymous with truth. The claim that 2+3=5 also has no possibility of refutation. Does that mean it is not true? The same goes for the claim of natural selection in evolution. It cannot be refuted but is completely true.
