According to the Rambam (Pt. 9 Mahal. Maccabees 54) and the Shulchan Arba (Yod. 57:3), eating poultry meat in milk is forbidden by the rabbis, lest he come and eat animal meat in milk, but it is permitted in cooking and enjoyment. Why didn't they fear and forbid cooking and enjoyment as well, lest he come to cook and enjoy animal meat in milk?

The question is how you define the fear that you will come to cook meat in milk. As in any case of fear, two formulations can be proposed here: 1. In the actual cooking that you will do here, you will come to add and cook meat with milk. 2. If you are allowed to cook chicken in milk, you will come (and actually not necessarily you. Others will come) another time to cook or eat meat in milk. In the first formulation, there was room for your question, but this is an unreasonable formulation. There is no reason that in this act itself I will come to cook or eat meat in milk. The concern is about other cases. Therefore, if I am forbidden to eat chicken in milk, it is a sign that will stop the deterioration of meat in milk. At the same time, people will understand that chicken is not meat, and even if chicken is permitted to be cooked in meat, it is forbidden.
