I have no recommendations. I personally hardly engage with them. But each according to what speaks to him. I also do not accept the implicit distinction in your words between Jewish textbooks and those that are not. Thought books by Maimonides or the Khozari are no different from Kant's books. They are all thought books that are the fruit of the author's thought (and not the Torah from Sinai), and as such, each chooses what speaks to him and builds it.
