When I see a saying by a sage that contradicts what we know according to science
What should I say that the sages were wrong? Or is science wrong (and will its error become clear over the years? Or will it not become clear, but the error is ours,)

I don't know what you should say, I know what I think. If you also agree with what I say, you can of course say it out loud.
What I think is that it is likely that the sages were wrong, since their scientific knowledge was the science of their time and it was of course less up-to-date than that of today. Of course, there is no certainty in science, and it could turn out that they were wrong.
