Cooking on Shabbat
Peace, Your Honor,
Let's say I cooked meat separately and garlic separately, is it permissible for me on Shabbat to put the meat on the grill with the garlic on it, assuming that perhaps it has something to do with flavoring the meat? Is this called cooking?

I don't think there's a problem with that. When we discuss adding spice to a dish on Shabbat, we're discussing the cooking aspect of the spice and not the flavoring aspect of the dish. See for example here: https://halachayomit.co.il/he/Default.aspx?HalachaID=1628&PageIndex=64
