A holy covenant or a holy Sabbath?
The covenant will also include uncles and aunts who do not observe the Sabbath properly.
This is a fact and it's not really up to the father and son to change it.
This will also be filmed and documented even if it is done in the synagogue on Shabbat.
A court of law or a grumpy tax collector or both together will not help.
Is it permissible or even appropriate in such a situation to postpone the wedding to Sunday?

I don't think it's appropriate to postpone the covenant. Those who commit offenses are their problems, not yours. But it's also not right to assume that the Covenant won't help. Let the speakers know that you're not ready for it, and if they insist – they're not invited. Let them not come at all.
