If you are looking for books in Hebrew, I know relatively old literature. There is a fairly thick book but simple and clear to read, Irving Coffey, Introduction to Logic. On the formal aspects, a bit by Ebron Polkow, Logic for Thinkers and Computers. Philosophical aspects (not an easy or short book) – Introduction to the Theory of Logic, Hugo Bergman. There is a course at the Open University, but I don't know the book. Their books are usually good and intended for self-study. It's worth checking out. Mathematical logic is a different opera, of course. There is extensive professional literature in many subfields (but probably not in Hebrew).
