If today all Jewish women decided to cancel the seven clean days, would this have halakhic validity, and what is the ruling on regulations such as those of Rabbi Gershom, etc.? Is it possible to cancel them?

Seven clean days is a Torah law and cannot be canceled. If you mean the custom of the women of Israel known as the homrah of the rabbis of Zira, it is indeed a custom that can be canceled. Regarding our Rabbi Gershom, the same applies. Although they did confiscate the fetus, even that was only for a thousand years.
