Hello, I’d like to ask a question regarding kashrut, if the Rabbi deals with this area. Is it possible to use sous vide equipment on Passover if it was used during the year for cooking leavened food, aside from the sealed bag, which is replaced with a new bag for each cooking session?
*Sous vide is a cooking method in which the food is vacuum-sealed in a durable bag and the bag is placed in hot water controlled by a device that circulates the water and keeps it at a constant temperature.
The container holding the water, the heating device, and the device that seals the durable bag are used repeatedly in every cooking session.

Hello. I’m not familiar with this technique. As you describe it, if absolutely nothing—not even moisture—escapes outside the bag (that is, it is completely sealed), I do not see any prohibition here.
